Sugar-Free Chocolate Truffles


Yes you read that right!   You're in for a REAL treat today as I share with you a successful experiment that left all of my I-Only-Eat-REAL treats audience licking their fingers.  


You know we LOVE ME Craving Cocoa and recently I've been exploring new ways to use it outside of my normal evening cocoa drink. 


 At the end of almost every day I sit down and savor a warm cocoa drink after putting my kids in bed.  It's thick and rich and dreamy and contains all of the mood boosting fabulousness of cocoa powder without the sugar!  I simply heat my almond milk in my giant Momsanity mug and put it in my Vitamix.  I then add my scoop of Craving Cocoa and blend for a few seconds before savoring.  It's that simple!


Anyway, I've been experimenting.   You may remember my Halloween Peanutbutter cups?  If you haven't be sure to give those a shot too!


As we continue our holiday season I've been playing around in the kitchen trying to create something really easy and scrumptious and came up with these little bites of delight!

  • 1 cup of your favorite nut or seed butter
  • 1 1/2 oz (four squares) of dark chocolate (I used Lily's Stevia Sweetened which is also Dairy Free)
  • 1/4 cup coconut oil
  • 3 Tbsp ME Craving Cocoa
  • 3/4-1 cup equivalent sweetener (powdered or liquid sweetener–I used Swerve Confectioners)
  • 1/2 cup finely shredded coconut 

 

  1. Add the almond butter, chocolate, and coconut oil to a sauce pan over medium-low heat.  Slowly whisk in the cocoa powder until incorporated and the lumps are removed.  Next, add the sweetener and whisk to incorporate.  
  2. Cook until the chocolate has melted and the mixture is smooth. Pour the mixture in a dish and cover with plastic wrap.  Place in the refrigerator for 3 hours or until set (or throw it in the freezer to cut the time).
  3. Scoop out about 1 Tbsp of the truffle mixture, form into a ball, and roll in the shredded coconut.  Repeat for the rest of the truffle mixture (makes about 20 truffles).  If the chocolate starts to melt while forming into balls place it back in the refrigerator. Place the finished truffles in the refrigerator (or freezer) for 30 minutes – 1 hour to set.
  4. Beware:  These DO melt quickly so don't leave them sitting out.
  5. Enjoy!  They are TRULY scrumptious!!
