I enjoy putting a tasty meal on the table for my family, but because I work in the afternoons right until dinner time I need make-ahead or fast-cook meals that I can throw together while my guys play outside for a few minutes when Daddy gets home. This is a family favorite and a go-to. Forgive the lack of exact measurements as I like to throw things together Yes, this is eaten out of a serving bowl. That’s the way we roll!
Ingredients:
8 oz Raw Shrimp
1 pound lean ground turkey
Frozen Peppers and onions ( I like the Fire-Roasted Variety from Trader Joes- Fresh are also great and can be purchased already chopped-score!)
Jarred Garlic
Olive Oil
2 bags shredded cabbage or broccoli slaw
Jarred Organic Salsa
Sliced Avocado or Guacamole
Jarred jalapenos (optional)
Micr0wavable Brown Rice ( I like the Trader Joe’s Jasmine rice in the frozen section) or 1/2 cup black beans (optional)
Instructions:
1. In a large Frying Pan Brown the turkey with a few spoonfuls of garlic (we like garlic around here). Add the frozen veggies until mostly cooked then add the shrimp until pink. Add jar of salsa once meat is cooked.
2. While meat is cooking, in a second frying pan stir fry your shredded veggies in a drizzle of olive oil.
3. Microwave your rice according to directions (optional) or heat your beans (also optional)- I typically do not eat starch at dinner- just depends what else I’ve had that day and whether I’ve worked out. I listen to my body.
4. Put about 1/2 cup cooked rice or beans on the bottom of the bowls followed by a large portion of veggies, then the meat/salsa mixture. Top with 1/3 sliced avocado and extra salsa and pickled jalapenos if desired.
