Pumpkin Pudding


Do you love all things pumpkin? I've found it's polarizing. Most love it and a few hate it!

Here's the thing with pumpkin. It sounds so healthy, right? Pumpkin bread, pumpkin coffee, pumpkin muffins, pumpkin pancakes... The truth is the pumpkin part IS healthy (did you know that pumpkin is full of Vitamin A, Vitamin C, Potassium and Fiber), but all the other stuff that goes into most of those treats is NOT even close.

So rather than driving through Starbucks for a BIG sugar rush or grabbing pumpkin doughnuts/icecream/bread/etc. let's make some super easy, fun, tasty and satisfying recipes that all take 5 minutes or less to make? Whatcha think?

First thing's first. When you go shopping for pumpkin be sure to buy plain old organic pumpkin (not the filling).
Here are my favorites:

1. Pumpkin Shake: This is a favorite of mine! I use 1 scoop of vanilla NP Pro, 1/2 cup organic canned pumpkin, ice and almond milk for a deliciously satisfying milkshake without added sugar, fat, and processed junk. Add frozen spinach for thickness and a surge of greens!

2. Pumpkin Coffee: Make your own latte! Mix equal parts coffee and warm unsweetened milk substitute in a blender with 1/4 cup organic canned pumpkin and 1 tsp. pumpkin pie spice and Stevia drops to taste. Like it frozen? Leave it cold and add ice.

3. Pumpkin Pudding: This is my son's favorite! It's a super great healthy treat and they won't even know it's healthy! See below for a visual of this delicious treat!

  • 1 Cup Dairy-Free Unsweetened milk
  • 1 Cup canned pumpkin
  • 1 tsp. vanilla
  • 1/2 cup chia seeds
  • 1 1/2 tsp pumpkin pie spice
  • 6 T. Swerve
  • 2 Droppers Full of Liquid Stevia
  • Pinch Salt

Place all ingredients in the Blender and blend like crazy until the desired consistency is reached. It could take several minutes.
