Recipe: Chocolate Mug Cake (Dairy-Free)

Chocolate Mug Cake (Dairy-Free)

(makes 2 servings)

Ingredients:

  • 1 large egg
  • ¼ cup Swerve sweetener
  • 1 pinch salt
  • 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp ghee or Earth Balance Soy-Free spread, melted
  • 1 Tbsp coconut oil, melted
  • 1/8 tsp vanilla extract
  • 1 Tbsp unsweetened coconut flakes
  • 2 Tbsp sliced almonds
  • 1 ½ Tbsp Enjoy Life chocolate chips
  • 3 Tbsp unsweetened coconut milk (or almond milk)
  • ¼ cup almond flour
  • ¼ tsp baking powder

 

DIRECTIONS:

  1. Whisk, egg, Swerve sweetener, salt, 2 T cocoa powder, ghee/Earth Balance, coconut oil, and vanilla extract together in a bowl until smooth.  Stir coconut, almonds, and chocolate chips into the mixture; whisk in coconut milk.
  2. Place almond flour into a small bowl and stir baking powder into almond flour with a mini whisk or fork. Pour flour mixture over batter and whisk just until you can’t see the visible almond flour.
  3. Divide evenly between 2 coffee cups. Gently tap the cups on a work surface to eliminate air bubbles.
  4. Place cups into microwave, one at a time. Microwave each cup about 45 seconds.  Let cool 2-3 minutes.
  5. Enjoy!
