Recipe: Julienned Zucchini and Garden Herbs


Ingredients:

3+ medium zucchinis

Fresh basil, oregano, and thyme leaves

2 garlic cloves, crushed

2 tbsp olive oil

Pepper to taste

2+cups grilled and diced chicken

 

Directions:

1.  Julienne the zucchini (the Julienne is a 2 ½ inch long and 1/8-1/4 inch wide cut; chop off the ends of the zucchini and cut into about 2 ½ inch long sections).


2. Cut up herbs (roll them up like a cigar to make it quick and easy).


3. In a medium skillet, heat the olive oil, then add garlic.  Saute for less than a minute.  Add zucchini and the chicken.


4. Toss in the fresh herbs.  Season with pepper.  Let sauté, stirring often for 5 minutes.


6. Serve warm.  Enjoy!
