Meatloaf- it’s an American standard isn’t it? However, with lots of breadcrumbs and ketchup the starch and sugar content doesn’t make it the most waistline friendly dinner. But have no fear- Momsanity is here with a makeover! Ready, set, let’s meatloaf!!! P.S. This is SOOOO Good that I have been making it almost weekly since tweaking the recipe. It makes 8 servings too!
Ingredients:
2 lbs ground beef, venison or turkey
3 eggs
1/2 cup almond flour
1/2 onion, chopped
1 bag of spinach
1/2 red or green pepper chopped
1 tsp. chili powder
1 tsp salt
1 tsp. oregano
1 tsp. thyme
2 cloves garlic, minced (or 2 tsp. jarred)
1/2 tsp. cayenne or chili powder
1/4 cup organic low-sugar ketchup or barbecue sauce
Instructions:
Pre-heat oven to 350
Saute vegetables in a bit of olive oil (start with onions then add spinach and garlic).
While veggies are cooking add almond flour to eggs and then mix with meat mixture in a large bowl (use your hands)
Place mixture in a loaf pan (make sure there is a little room at the top of the loaf pan). Add ketchup/bbq to top and spread evenly.
Place pan in oven for 1 hour to 1 hour 15 minutes until done.
Let sit for 10 minutes before slicing.
