Recipe Makeover: Pumpkin Chocolate Chip Cookies

You’re in luck!  Here’s way to enjoy a few tasty retreats without feeling guilty or bloated!  I’ve taken a sugar-loaded recipe and converted it into something that is not going to undo your physique goals!

 

 

PUMPKIN CHOCOLATE CHIP COOKIES

 

INGREDIENTS:

* 1 cup canned pumpkin

* 3/4 cup Swerve sweetener

* 1/2 cup coconut oil, melted

* 1 egg

* 2 cups almond flour

* 2 tsp baking powder

* 2 tsp ground cinnamon

* 1/4 tsp salt

* 1 tsp baking soda

* 1 tsp unsweetened almond milk (or coconut milk)

* 1 tsp vanilla extract

* 2 cups Enjoy Life chocolate chips

* 1/2 cup chopped walnuts (optional)

 

DIRECTIONS:

1. Preheat oven to 350 degrees.

Combine pumpkin, Swerve, oil and egg.  In a separate bowl, stir together almond flour, baking powder, cinnamon and salt.  Dissolve the baking soda with the almond milk, and stir in.  Add flour mixture to pumpkin mixture; mix well.

2.  Add vanilla, chocolate chips and nuts.

3.  Drop by the spoonful on greased cookie sheet.  Bake at 350 degrees for approximately 10 minutes or until lightly brown and firm.

4.  Enjoy!
