Recipe Makeover: Strawberry Chicken

One of my favorite things to do as a nutrition enthusiast is to find recipes and clean them up so they are healthier!  I was going through a magazine when “Theo’s Strawberry Chicken” caught my eye (this recipe is from a show called “A Chef’s Life).  I scanned the recipe and found a lot of ingredients that aren’t so friendly to our bodies so I’m here to share with you the updated version that is family-friendly and guilt-free!

Ingredients:

  • 4 chicken breasts
  • 1/4 tsp ground pepper
  • 1 Tbsp coconut oil
  • 1/2 tsp fresh thyme
  • 1 tsp fresh sage, chopped
  • 1/8 cup applesauce
  • 1/2 Tbsp Swerve sweetener
  • 1/4 cup water
  • 1/4 cup red wine vinegar
  • 1/3 cup freshly squeezed orange juice
  • 1/2 cup red onion, minced
  • 2 cups strawberries, diced

Directions:

1.  Preheat oven to 450 degrees.  Season the chicken with pepper.

2.  In a medium pan, heat coconut oil over medium heat.  Add chicken.  Cook 5 minutes on one side until browned, flip chicken over and cook another 30 seconds.  Transfer chicken to baking dish.  Leave oily juices in pan.  Bake 25 minutes, until cooked through.

3.  In a small bowl, whisk together thyme, sage, applesauce, Swerve, water, vinegar, and orange juice.  Set aside.

4.  Pour off all but 2 Tbsp of oil from pan.  Add onion and saute for 1 minute.  Add the berries.  Pour in the sauce mixture and stir until syrupy, about 5 minutes.

5.  When the chicken is done, spoon the berry sauce over it and bake another 2-4 minutes.  Serve with broccoli.
