Recipe: Mediterranean Shrimp


Ingredients:

1 lb raw, peeled shrimp

¼ – ½ cup diced red onion

2-3 tomatoes, diced

1 clove garlic, minced

½ cup feta cheese

1/8 – ¼ cup  Balsamic vinegar

2 tbsp olive oil

2 tsp basil

2 tsp oregano

Ground black pepper

 

Directions:

  1.  Heat olive oil in saucepan.  Add shrimp and garlic.  Cook until shrimp are pink.  Remove from heat and place in bowl.
  2. Toss in tomatoes and herbs.  Add balsamic vinegar.  Top with cheese.
  3. Serve warm or cold!  Enjoy!
