Sister Spotlight: Carrie Ross


Our Sisters are AMAZING!  Carrie Ross has allowed us to share in her amazing physical transformation and shares openly about how the process has brought her closer to God.  She has truly adopted a healthier lifestyle and not only looks and feels fitter, but her entire family is benefiting from the changes.  Thank you Carrie for sharing!!

 

 

“My name is Carrie Ross and I am married to David and we have two kids, a girl age 6 and a little boy, age 3. I am an adolescent mental health therapist in Hickory, NC. I joined Momsanity Sisterhood in October 2013 because I was tired of doing the same old thing and not seeing any results. I had trained for nine half marathons over the past 4 years and had lost no weight.”

Favorite Exercise:

My favorite exercise to do are hill sprints. I run up and down my driveway 10 times. I love the burn, it is quick and wasy to do.

Favorite Momsanity Recipe:

My favorite recipe is the Momsanity pizza noodle casserole. We eat it at least once a week!!!

Ingredients:

  • 2lbs ground turkey
  • 1- 15oz can pizza sauce (look for one that is lower in sugar and sodiu
  • 1-15oz can tomato sauce
  • 2 zucchini, sliced lengthwise and into strips (or use a spiralizer- even more fun!!)
  • 2 yellow squash, sliced lengthwise and into strips
  • 6-8 sundried tomatoes (the more the better honestly), chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • salt and pepper, to taste
  • 1-2 tablespoons olive oil


Instructions

  1. Preheat Oven to 375
  2. Brown Turkey with Spices (add olive oil only if using super lean turkey)
  3. Cut the ends off the the zucchini and squash and cut them thinly, lengthwise using your knife or mandoline. Once they are cut lengthwise, cut those strips into smaller strips, like fettucine noodle size.  You can also “spiral” them if you have a spiralizer.
  4. Once your turkey has cooked about ¾ of the way through, add your can of tomato sauce and mix to combine. Let cook down for about 3-5 more minutes.
  5. Add ground turkey, sundried tomatoes, and zucchini to a 9 x 11 baking dish. Add your can of pizza sauce on top, along with salt and pepper. Mix with a large spoon so all the “noodles” and ground turkey are covered in pizza sauce
  6. Bake in the oven for about 30-40 minutes or until the top is slightly browned and the veggies are soft
  7. Let sit for at least 30 minutes to thicken before serving.
  8. Sprinkle with mozzarella or parmesan if desired
