I am married to my Best Friend and the love of my life for almost 25 years; Don. He works in the OR at Medical Park Hospital and looks at his job as his way to serve and help others in their times of stress and struggle. God brought us together when I was 30, a single parent of a total gift from God; Ben. We have 2 adult sons Ben-26 (Don adopted him immediately) and Sam 23. Outside of God and my hubby; they are the loves of my Life. Ben is still working towards his goals and searching for what God has for him. Sam is blind and Autistic and is “my sweetheart” who will always be with us. It has made our life both hard and wonderful at the same time.
My journey to health and wholeness has been a rollercoaster. Because of so many past illnesses; I have been very sick and pretty much knocked of my feet, so to speak, for the past year. Because of that, I have learned some very valuable and HARD lessons:
1- God doesn’t need my help to run things and keep it all together for HIM- He’s got it all under control. Ouch-that stung!
2- No matter how dark it has gotten and it has been pitch black some days; He has always been the LIGHT that has gotten got me through.
3- I do NOT know what my future holds; but I know He is doing a work in me and being flat on my back-literally- has been the BEST thing that could have happened to renew me spiritually for I had grown very dry.
4- I am looking forward to the next season and feel like my NEW life is just beginning to bud and excited to see what the future brings. Though my traditional Nursing Career is essentially over; what’s next is going to be even better!
5- Last, but, definitely not least- Momsanity has been my link to the outside world as I have spent almost a year in isolation; in the hospital, a clinic , doctor’s office or with visiting home care. Only by HIS Grace, a skilled surgeon, a wonderful doctor and Miracle Working Power; I am walking by myself and feel totally well on the inside. I KNOW, in time, the rest will come.
Thank you dear sisters and Coaches; I owe you a debt that I could never repay. I pray for you and your families daily; for all of your trials, struggles and BIG WINS. I pray that through your journey you, too, will draw closer to THE ONLY ONE who can get us to and through it all!
Roasted Cabbage
1 head of red or purple cabbage
Olive oil
Sea Salt, Pepper and Garlic
Slice the cabbage into 1 inch slices-Lay on Baking Sheet/Stone that has been sprayed with Coconut Oil.
Brush each slice with Olive Oil –Add Salt, Pepper and Garlic to taste. Roast in oven for about 30-40 minutes at 400.
NOTE: After writing and using this recipe often I saw it featured on an episode of Dr. Oz. I stopped switching channels because he was talking about how food allergens and sensitivities can make you sick- REALLY!? Anyway; one added improvement shared was to turn them over after 30 mins. and season the other side-Baking each side for 30 mins. I thought that was an excellent idea.
