All about Tricia:
I am a busy mom of a toddler and two preschoolers. For several years my passion has been ridding our household of toxins in cleaners, lotions, shampoos, bedding…. everything in our home! I have also done consulting work to help others do the same in their homes and worked for Mightynest.com – a retail site committed to finding the best toxin-free products and offering them to consumers with a portion of sales going back to the school of their choice.
I am loving being part of the Momsanity Sisterhood because it provides a community of like-minded women that I have not been able to find anywhere else. It’s very motivating and informational both to have the resources provided by the coaches and the community of sisters to ask questions or cheer each other on. Best money spent all month!
Tricia’s Favorite Recipe:
Super Delicious Turkey Vegetable Stew
Ingredients:
1 lb. ground turkey (or chicken)
14 oz chick peas rinsed and drained
1 cup chopped onion
1 T flour
1/3 cup sun dried tomato pesto (can be hard to find in stores… available via Amazon)
14 oz diced tomatoes
1 T balsamic vinegar
1/2 tsp xylitol or swerve
4 cups chopped peppers (usually 3…. any color)
1 cup chopped zucchini or zucchini squash
salt/ pepper – small amount
To cook:
Cook ground turkey with oil 5-10 minutes. Transfer to slow cooker. Add chick peas, onion, salt, papper. Stir flour and pesto separately until smooth. Add to slow cooker along with diced tomatoes, balsamic vinegar, xylitol. Stir well. Cook on low 8 hours or high 4 hours. Add pepper and zucchini near the end – cook on high for 30-40 minutes.
Delicious to eat by itself or on top of quinoa or couscous. Makes 4 Servings
